Beef tallow, not seed oils
Everything fried at Wayne Ale House comes out of beef tallow. No canola, no soybean, no vegetable oil blend. Tallow holds a high temperature without breaking down, so the wings come out crisp instead of greasy, and it carries a flavor oil never will.
It costs more than the alternative and we use it anyway. Enough guests asked what we fry in that it earned a permanent answer on the website. Questions about how something is cooked are always worth asking, call 973 706 5505 and the kitchen will tell you straight.

Seed oils are heavy on polyunsaturated fat, which breaks down under frying heat and forms toxic aldehydes. Tallow is mostly saturated and monounsaturated fat, so it holds together in the fryer. Frontiers in Nutrition, 2021
In head to head frying tests, fats low in polyunsaturates gave off around 9 to 14 percent of the aldehydes that sunflower and corn oil produced at the same heat. Scientific Reports, 2019
Beef tallow is about 4 percent polyunsaturated fat. Soybean oil, the base of most fryer blends, is close to 60 percent. USDA FoodData Central
